There’s no shortage of diets claiming to be the best, from vegan to carnivore to South Beach to the Viking diet. Yet, where I think they all go wrong is their focus on calorie counting (a polite way of saying “starvation”, if you ask me) and sticking to a rigid set of foods.

So, what led me to creating my keto recipe book in the first place…

A few years ago, my father was on the brink of developing type 2 diabetes. This was despite him eating foods we thought, at the time, were healthy, like pasta, bread, potatoes, and other foods made from grains and carbs.

He also ate lots of foods labelled “diet”. We later found out these were loaded with sugars, sweeteners, and other ingredients that were sending his blood sugar skyhigh and causing him to get fatter around the belly. And as his waistline ballooned his energy levels and joy in life plummeted.

He mutated from the happy, fun loving dad I remembered as a child into an irritable slouch, wasting away in front of the TV.

It became clear his health was only going to get worse unless we made drastic changes to his diet.

Long story short, we discovered how powerful the keto diet can be for weight loss. And once he’d made the switch, my dad regained the energy he needed to get back into cycling. The pounds then started to drop off and he became healthier and happier.

I’m delighted to say that he’s now back to being the laughing, fun loving dad I always remembered.

The way I’ve described it makes switching to keto sound easy. But our journey was far from smooth.
